HOW TO CREATE AN IMPRESSIVE VALENTINE’S DAY CHEESE PLATE AT
STINKY BKLYN

Stinky bklyn is not just a cheese shop. They also have charcuterie, dips, various jarred and fresh accoutrements, and a wide selection of beers. Additionally, they serve sandwiches and soups, distribute to restaurants like Clover Club,  plus they run a busy catering business. You’d think with all of that going on, they wouldn’t have time to give you a crash course in cheese plate construction, but you’d be wrong. Decrees cheese buyer Nathan Wolf Kahn: “The three rules of the perfect cheese plate are color, textural variety, and vertical lift.”

The cheeses from the epic board up top, from left to right:

– Fourme D’Ambert — a pasteurized cow’s milk blue cheese.
– Barnburner — a delicious smoked cheddar made right in Brooklyn.
– Wabash Cannonball — an ash-ripened French goat cheese.
– Various accoutrements from Stinky: fig jam, dark chocolate nibs, walnuts, dried cherries, cornichons, grapes, and a dusting of pomegranate seeds.
